Therefore, key terms, the three dimensions and various models of sustainable will be defined before a brief historical review follows. Hereafter, the Nordic European countries will be examined shortly in regards of their individual sustainability efforts. The thesis proceeds with a holistic analysis of major environmental sustainability issues within the value chain of the food system. Subsequently, for each sector of the value chain promising sustainable innovations shall be examined and be portrayed with feasible business cases from the Nordics. Among the major findings of the first major part of the research are that the production of meat as well as the heavy application of Phosphorus and Nitrogen damage cause serious environmental damage and both must be reduced quickly. Also, food waste quantities in the consumer sector can be hold responsible for a remarkable amount of emissions. Consequently, the individual consumer must also be hold responsible for unsustainable behavior. For the second main purpose of the thesis among the major results of the research are that both vertical farming and alternative animal-based proteins have a massive potential to contribute towards more sustainability in the food industry.
